Big Digs are unique sand creations. Much less creative, much more grunt work, but the kids love them. The basic premise is this: As soon as the tide reveals the sand, draw a circle as big as the diggers think they can manage. Build walls of sand as high as possible until the tide comes back in about 6 hours. When the tide gets to the wall, the kids go in the middle and defend the walls (which really means, they sabotage the walls with sometimes good intentions). Eventually the tide rises to the point where it crests and then there is between 30-90 seconds of collapse action where the kids play in the water. It is really a blast (and a ton of work.)
